I sat up late last night catching up on my blog posts and my boyfriend presented me with a delicious surprise. After dinner I had started to scour the cabinets for something sweet but nothing was to be found that met detox guidelines. So, I settled on a cup of detox tea with berry flavor. Not exactly thrilling but hey - I'm detoxing. Why did I crave sweets? Well, check out my food diary from yesterday. It was low in protein and it caught up with me at night as a sweet craving.
He whipped up an amazing concoction that hit the spot. It's so simple, yet I'd never thought of it myself. He simply mixed dry, organic coconut with almond milk, Bluebonnet Whey protein powder and egg whites. The shortest recipe in the history of dessert. Give it a whirl. I want to try this with Chia seeds mixed in as they will make the substance more pudding like.
And, here's the cooked version: Egg-white coconut madeline.
High in protein. Sweet taste. Decent amount of fiber. Only 2 grams of sugar (not added but naturally already in it). No dairy. OMG.

Recipe please! Was the coconut shredded? How do you cook it? What are the measurements of each ingredient?
