I'm a pumpkin lover. I can't wait for my first slice of pumpkin pie of the year, so in the meantime I'll make do with healthier versions of pumpkin.
I came across a great recipe for pumpkin oat balls. Nope, they're not anything like the Schweddy Balls from SNL (one of my favorite skits). I modified it slightly to clean it up a bit for you to enjoy guilt-free. Just don't shove them all in your mouth all at once. Enjoy!
Ingredients:
Mix everything together in a large bowl. You kind of want to press and fold to get everything together. Roll into balls about 1 inch in diameter. Place on a wax paper and chill for about 30 minutes.
- 1 cup pumpkin, canned unsweetened
- 3 cups oats, not cooked
- 4 tbsp maple syrup (or use stevia instead)
- 1/2 tsp cinnamon
- 1/2 tsp pumpkin pie spice
- 1 tsp vanilla extract
- 1 tbsp flax seeds
- 1 cup walnuts
- 1/2 cup dark chocolate chips.
